  • Start by preparing your ingredients; having everything ready will make the cooking process smoother and more enjoyable.
  • In a large pot, heat the vegetable oil over medium heat until it shimmers.
  • Carefully whisk in the flour, forming a roux. Continue stirring consistently, allowing it to cook for about 15 to 20 minutes, or until it reaches a beautiful dark caramel color.
  • Add the chopped onion, bell pepper, celery, and minced garlic to the pot. Sauté until the vegetables have softened, about 5 to 7 minutes.
  • Fold in the diced chicken, allowing it to soak up the aromatic flavors. Cook until the chicken is light golden brown, approximately 5 to 8 minutes.
  • Pour in the chicken broth and add the drained diced tomatoes, Cajun seasoning, salt, and pepper. Stir to combine, then bring the mixture to a simmer.
  • Allow the étouffée to cook for about 30 minutes, stirring occasionally.
  • Serve hot over a bed of fluffy white rice, garnished with fresh green onions.
