  • 3 pieces ripe avocados Should yield slightly to gentle pressure.
  • 1 cup cherry tomatoes Rinse and slice in half.
  • 1 small red onion Finely diced.
  • 1 cup sweet corn Can be fresh or canned.
  • 1/2 cup fresh cilantro Chopped.

Dressing

  • 1/4 cup lime juice Freshly squeezed.
  • 1/4 cup olive oil Quality extra virgin recommended.

Instructions
 

Preparation

  • Start by preparing the avocados. Slice each in half, remove the pit, and scoop the flesh into a mixing bowl.
  • Add the rinsed and halved cherry tomatoes to the bowl with the avocado.
  • Finely dice the red onion and add it to the salad.
  • Incorporate the sweet corn into the mixing bowl.
  • Chop the fresh cilantro and add it to the salad.

Dressing

  • In a separate bowl, mix together lime juice and olive oil. Season with salt and pepper to taste.
  • Pour the dressing over the salad ingredients and gently toss to combine. Adjust seasonings if necessary.

Notes

For optimal flavor, use avocados at peak ripeness. If using canned corn, drain well. Consider adding other ingredients like black beans or diced bell peppers for variation. To prevent browning, squeeze extra lime juice over leftover salad before storing in an airtight container.
