Preparation

  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • Mash the ripe bananas in a mixing bowl with a fork until smooth, leaving a few small lumps for texture.
  • Stir in the melted butter until well combined.
  • Mix in baking soda and a pinch of salt.
  • Add sugar, egg, and vanilla extract, mixing thoroughly.
  • Gently fold in the all-purpose flour until just incorporated.
  • Pour the batter into a greased loaf pan, smoothing the top.

Baking

  • Bake in the preheated oven for about 60 minutes, or until a toothpick comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, use very ripe bananas. You can also add mix-ins like walnuts or chocolate chips. Store banana bread wrapped tightly for up to three days or freeze slices individually for up to three months.
