Preparation

  • Heat a large pot over medium heat and drizzle in a couple of tablespoons of olive oil.
  • Add diced chicken and sliced sausage, cooking until browned all over.
  • Add diced onion, bell pepper, and celery; stir and soften for about 5-7 minutes until onion turns translucent.
  • Add minced garlic and cook for just one minute until fragrant.

Cooking

  • Add long-grain rice, Cajun seasoning, dried thyme, salt, and pepper; stir well to coat the rice.
  • Pour in chicken broth and diced tomatoes, bringing the mixture to a boil.
  • Reduce heat to low, cover the pot, and let simmer for about 20-25 minutes.
  • Stir in shrimp and cook for another 5-7 minutes until shrimp are pink.
  • Garnish with sliced green onions and serve hot.
