For the main ingredients

  • 4 pieces Chicken pieces (thighs or breasts) Main protein source.
  • 1.5 cups Uncooked long-grain rice Base of the dish.
  • 1 can Coconut milk Adds creaminess and flavor infusion.
  • 1 cup Chicken broth Enhances flavor depth.

For seasoning and garnish

  • 1 tablespoon Fresh thyme, chopped Adds aromatic freshness.
  • 1 teaspoon Paprika Provides mild warmth and color.
  • 1 teaspoon Salt Essential seasoning.
  • 1 teaspoon Pepper Essential seasoning.
  • 1 tablespoon Cilantro, chopped (optional) For garnish and added freshness.

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion, diced bell pepper, and minced garlic, sautéing until softened, about 3-5 minutes.

Cooking the Chicken

  • Introduce chicken pieces and cook until browned on all sides, about 5-7 minutes.

Adding Rice and Liquids

  • Stir in the uncooked long-grain rice to toast slightly for about a minute.
  • Pour in coconut milk and chicken broth, stirring in thyme, paprika, salt, and pepper.

Simmering

  • Bring to a boil, then reduce heat to a simmer and cover. Cook for 20-25 minutes or until rice is tender and liquid is absorbed.
  • Fluff rice with a fork and serve hot, garnished with fresh cilantro if desired.

Notes

For added flavor, marinate chicken in lime juice and spices before cooking. Adjust spice level to preference. Add frozen peas or corn in the last few minutes for added sweetness.
