  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup salsa Use your favorite type of salsa.
  • 3 cups cooked rice Can use white, brown, or cauliflower rice.
  • 2 cups shredded cheese (cheddar or Mexican blend) Experiment with other types of cheese for different flavors.
  • Salt and pepper, to taste

Preparation

  • Heat a large skillet over medium heat and add the ground beef. Brown it for about 7 to 10 minutes, breaking it apart as it cooks.
  • Drain excess fat from the skillet, leaving just enough for flavor.
  • Sprinkle taco seasoning over the browned beef and mix well.
  • Add the black beans, corn, and salsa to the skillet, mixing everything thoroughly.
  • Fold in the cooked rice until fully combined and heated through.
  • Sprinkle shredded cheese over the top and cover the skillet to let the cheese melt.
  • Once cheese is melted, season with salt and pepper to taste, then serve directly from the skillet.
