  • Cook the penne pasta in a large pot of salted boiling water for 8-10 minutes until al dente, then drain and reserve a small cup of the cooking water.
  • In a large skillet, cook the bacon strips over low heat until crispy. Remove the bacon and place it on a paper towel-lined plate, reserving the drippings in the pan.
  • Slice the chicken breasts into thinner cutlets and season with salt, pepper, onion powder, and Italian seasoning. Sear in the reserved bacon drippings over medium-high heat until golden brown and cooked through, about 5 minutes per side. Let rest before chopping into bite-sized pieces.
  • Melt butter in the same skillet over medium-low heat, then add minced garlic and cook until fragrant. Stir in flour to form a roux and continue stirring until light golden.
  • Gradually whisk in half-and-half until the sauce thickens. Mix in ranch seasoning and shredded cheese until fully melted and incorporated.
  • Combine the cooked penne pasta, chopped chicken, and creamy ranch sauce in the skillet, tossing well to coat. Top with crumbled bacon before serving.

Notes

Consider adding vegetables like spinach or broccoli for nutrition. You can substitute whole wheat pasta or turkey bacon for a healthier option. This dish can be made ahead of time by preparing the chicken and sauce earlier and then mixing before serving.
