Preparation

  • Marinate the chicken in soy sauce, salt, and pepper for at least 15 minutes.
  • Blanch the broccoli in boiling water for about 2 minutes, then transfer to an ice water bath.

Cooking

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add the marinated chicken to the pan and cook for 5-7 minutes until browned.
  • Stir in minced garlic and ginger, cooking for about a minute.
  • Add the blanched broccoli, remaining soy sauce, oyster sauce, sugar, and cornstarch mixture to the pan.
  • Stir everything together and cook for an additional 2-3 minutes until the sauce thickens.
  • Serve hot over steamed rice or noodles.
