Instructions
 

Prepare Yeast Mixture

  • In a medium-sized bowl, combine the warm water, active dry yeast, and a bit of sugar. Stir gently and let this mixture sit undisturbed for about five minutes, or until it becomes foamy.

Mix Dough

  • In a large mixing bowl, sift together the all-purpose flour and salt. Add the yeast mixture, followed by the egg, milk, and melted butter. Mix everything until a soft, cohesive dough forms.

Knead Dough

  • Knead the dough on a floured surface for about five minutes until smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise in a warm place until it has doubled in size, about 1-2 hours.

Fry Beignets

  • Roll out the dough to approximately 1/4 inch thickness and cut it into squares using a sharp knife or pizza cutter. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Fry the beignet squares in batches for about 1-2 minutes on each side until golden brown.
  • Remove from hot oil, drain on paper towels, and dust generously with powdered sugar before serving.

Notes

Ensure your yeast is fresh. Preheat oil to the correct temperature for frying. Store leftovers in an airtight container at room temperature for 1-2 days. To restore texture, reheat in the oven.
