Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper on both sides.
  • Cook chicken until golden-brown and fully cooked through, about 5-7 minutes per side.
  • Set the cooked chicken aside on a plate to rest.
  • In the same skillet, add minced garlic and sliced mushrooms, sautéing until the mushrooms soften, about 5-6 minutes.
  • Stir in fresh spinach until it wilts, about 1-2 minutes.
  • Pour in chicken broth and heavy cream, stirring to combine. Let simmer for 3-4 minutes.
  • Return the chicken to the skillet, allowing it to soak in the sauce for an additional 5 minutes.
  • Adjust seasoning with salt and pepper, if needed.
  • Garnish with fresh chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stove or in the microwave, adding a splash of broth if the sauce thickens too much.
