Preparation

  • Heat a large pot or skillet over medium-high heat and add olive oil.
  • Sauté the chopped onion and minced garlic until the onion becomes translucent, about 5 minutes.
  • Add the ground beef to the pot, breaking it into smaller pieces and cooking until browned, about 7-8 minutes.
  • Drain any excess fat from the meat.
  • In a separate pot, bring salted water to a boil for the rotini pasta and cook according to package directions until al dente, about 8-10 minutes.
  • Stir in the Rotel diced tomatoes into the beef mixture and let simmer for 5 minutes.
  • Season the mixture with chili powder, cumin, salt, and pepper.
  • Lower the heat and pour in the heavy cream, stirring until combined.
  • Gradually add the shredded cheddar cheese, mixing until melted.
  • Combine the cooked rotini pasta with the creamy beef mixture, stirring to coat.
  • Heat everything together on low for an additional 2-3 minutes and garnish with fresh cilantro before serving.
