Dressing

Preparation

  • Wash the cucumbers thoroughly under running water.
  • Chop the cucumbers into bite-sized pieces.
  • Chop the tomatoes into similar-sized pieces as the cucumbers.
  • Finely chop the red onion.
  • Dice the bell pepper, removing seeds and stem.
  • Rinse the parsley, shake off excess moisture, and chop finely.

Assembly

  • In a large mixing bowl, combine cucumbers, tomatoes, onion, bell pepper, and parsley.
  • Squeeze the juice of one lemon over the salad and drizzle with olive oil.
  • Season with salt and black pepper to taste, then gently toss all ingredients together.
  • Let the salad sit for 10-15 minutes before serving to allow flavors to meld.

Notes

You can use other vegetables like radishes or avocados if available. Consider adding a splash of vinegar for extra tanginess. For variations, substitute parsley with basil or mint.
