For the chicken

Instructions
 

Preparation of Mushroom Filling

  • Clean the mushrooms thoroughly and finely chop them.
  • In a skillet, heat olive oil over medium heat, add garlic and mushrooms, and sauté for 5-7 minutes until tender.
  • Transfer the mixture to a bowl to cool.

Stuffing Preparation

  • Add softened cream cheese and grated Parmesan to the cooled mushroom mixture.
  • Season with salt and pepper, then mix until well combined.

Preparing the Chicken Breasts

  • Cut a pocket into each chicken breast being careful not to cut through.
  • Season the outside of the chicken breasts with salt and pepper.

Stuffing and Baking

  • Stuff each chicken pocket with the mushroom and cheese mixture, securing openings with toothpicks if necessary.
  • Place the stuffed chicken in a greased baking dish.
  • Bake at 375°F (190°C) for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

Notes

Consider using fresh ingredients for the best flavor. You can also experiment with different types of mushrooms or add ingredients like spinach for variation. Let the chicken rest after baking to ensure juiciness.
