Preparation

  • Place the beef stew meat into the slow cooker, spreading it evenly across the base.
  • Halve the baby potatoes and add them to the slow cooker, positioning them among the beef.
  • Melt the unsalted butter in a small saucepan over medium heat and add the minced garlic, sautéing it until fragrant.
  • Pour the garlic butter over the beef and potatoes, seasoning with salt, black pepper, thyme, rosemary, and onion powder. Stir gently to combine.
  • Cover the slow cooker and set it to low for 6 to 8 hours or high for 3 to 4 hours.

Notes

For storing leftovers, let the dish cool, then store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently on the stove or in the microwave.
