  • 1 tbsp Olive oil Used for sautéing.

Assembly and Topping Ingredients

  • 8 pieces Corn tortillas Essential for rolling the enchiladas.
  • 2 cups Enchilada sauce Can be homemade or store-bought.
  • 2 cups Shredded cheddar cheese Provides gooey texture.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat and sauté the diced onion for 5 to 7 minutes until it becomes translucent.
  • Add minced garlic, ground cumin, and chili powder. Stir for an additional minute.
  • Add ground beef to the skillet, breaking it apart and cooking until browned and no longer pink, about 5 to 7 minutes.
  • Sprinkle with salt and pepper to taste and drain any excess grease. Set aside to cool.

Assembly

  • Soften corn tortillas in the microwave for 15 to 20 seconds if they are too brittle.
  • Spoon approximately 2 tablespoons of the beef filling into each tortilla and roll tightly, placing seam-side down in a greased baking dish.

Baking

  • Pour enchilada sauce over the assembled tortillas, ensuring all are well-covered.
  • Sprinkle shredded cheddar cheese on top.
  • Bake uncovered for 20 to 25 minutes until the cheese is bubbly and golden brown.

Notes

Feel free to customize with black beans, diced bell peppers, or shredded chicken. Can be made ahead and kept in the refrigerator.
