Preparation

  • Prepare your ingredients by dicing the onion, slicing the carrots, and cubing the potatoes.

Cooking

  • Heat a large pot over medium heat and add the olive oil.
  • Add the ground beef, breaking it into smaller chunks, and brown for about 5-7 minutes until no pink is visible.
  • Drain any excess fat, being careful to leave browned bits in the pot.
  • Add diced onions, carrots, and potatoes to the beef and sauté for about 5 minutes until the onions are translucent.
  • Pour in the beef broth, scraping the bottom of the pot to lift brown bits.
  • Add the diced tomatoes, garlic powder, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat, cover, and let simmer for 30-40 minutes until vegetables are tender.

Notes

Consider adding variations like peas, green beans, or bell peppers. To thicken, use a cornstarch slurry towards the end of cooking. Pairs well with crusty bread or a garden salad.
