Ingredients
  

For the Cake

  • 2 cups cake flour Spoon and leveled for best results.
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt Enhances flavor.
  • 3/4 cup unsalted butter, softened Keep at room temperature.
  • 1 1/2 cups granulated sugar Sweetens the cake.
  • 3 pieces eggs Room temperature.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1 cup milk Room temperature.
  • 1 cup sour cream Adds moisture.
  • 1 cup strawberry puree Fresh or frozen, for flavor.
  • 1 cup chopped fresh strawberries Adds texture.

For the Frosting

  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup strawberry puree For flavor.
  • 1 teaspoon vanilla extract
  • as needed cups heavy cream To adjust consistency.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with parchment paper.
  • In a medium bowl, whisk together the cake flour, baking powder, and salt.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, mix the milk and sour cream until well blended.

Baking

  • Gradually add the dry flour mixture to the wet mixture, alternating with the milk mixture, starting and ending with the flour mixture.
  • Fold in the strawberry puree and chopped strawberries.
  • Divide the batter evenly between the two prepared pans and bake for 25 to 30 minutes, or until a toothpick comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Frosting

  • Beat the softened butter until creamy, then gradually mix in the powdered sugar.
  • Add in the strawberry puree and vanilla extract, adjusting consistency with heavy cream as needed.

Assembly

  • Once cooled, frost the first layer of cake generously, add the second layer on top, and frost the entire cake.

Notes

Fresh strawberries yield the best flavor. Consider using room temperature ingredients for improved mixing. Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 7 days.
