Instructions
 

Preparation

  • Heat a tablespoon of olive oil in a large pot over medium heat.
  • Add diced onion, chopped carrots, sliced celery, and diced bell pepper. Sauté for 5-7 minutes until softened.
  • Stir in minced garlic and cook for another minute.

Cooking

  • Add chopped cabbage, diced tomatoes, vegetable broth, dried thyme, salt, and pepper to the pot.
  • Bring the mixture to a gentle boil, then reduce to a low simmer and cover. Let simmer for about 30 minutes.
