  • 2 large carrots, grated
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice Can substitute with agave syrup for a vegan option.
  • 2 tablespoons honey Use agave syrup for a vegan option.
  • to taste salt and pepper Adjust according to preference.

Preparation

  • Dice the ripe mangoes into small, bite-sized pieces.
  • Slice the green cabbage finely after removing the tough core.
  • Remove the seeds and slice the red bell pepper thinly.
  • Grate the carrots and chop the fresh cilantro.

Making the Dressing

  • In a separate bowl, whisk together the lime juice and honey until fully combined.

Combining

  • In a large mixing bowl, combine the diced mango, sliced cabbage, sliced bell pepper, grated carrots, and chopped cilantro.
  • Pour the dressing over the slaw mixture and gently toss to coat all ingredients.
  • Season with salt and pepper to taste.
  • Let the slaw marinate in the refrigerator for 15 to 30 minutes before serving.

Notes

For an extra crunch, consider adding nuts like cashews or almonds. This slaw is best served fresh, and if preparing in advance, add the dressing just before serving to keep the vegetables crisp.
