Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour your cake pan.
  • Cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  • Add eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing gently until just combined.
  • Fold in the crushed pineapple and shredded coconut until evenly distributed.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.

Notes

For best results, bring eggs and butter to room temperature before starting. If using fresh pineapple, finely chop it and drain excess juice. Consider adding lime zest for an extra twist. Drizzle a coconut glaze over the cooled cake for added flair.
