Dressing

Instructions
 

Preparation

  • Peel and dice the ripe pineapple into bite-sized pieces.
  • Wash and dice the cucumber into pieces similar in size to the pineapple.
  • Finely chop half a red onion and coarsely chop the fresh cilantro.

Dressing

  • In a separate bowl, whisk together the lime juice, honey, salt, and black pepper until well combined.

Mixing the Salad

  • In a large mixing bowl, combine the diced pineapple, cucumber, chopped red onion, and cilantro.
  • Pour the dressing over the salad mixture and toss gently to coat.
  • Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

If you can't find fresh pineapple, use canned pineapple in juice or water. For extra crunch, add diced bell peppers or a mild chili flake for spice. Prep ingredients ahead of time but dress shortly before serving to maintain freshness.
