Preparation

  • Preheat your oven to 350°F (175°C). Grease your tube or Bundt pan with butter or shortening and dust with flour.
  • In a medium bowl, sift together flour, baking powder, and salt.
  • In a large mixing bowl, cream together softened butter, shortening, and sugar until fluffy and light in color.
  • Add eggs one at a time, beating well after each addition.
  • Gradually mix in the dry ingredients, alternating with milk, starting and ending with the flour mixture. Fold in lemon juice and zest.

Baking

  • Pour the batter into the prepared pan and smooth the top with a spatula.
  • Bake for 55 to 70 minutes, until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
