Ingredients
  

Salad Base

  • 1 head Fresh romaine lettuce Washed and chopped
  • 2 cups Cooked chicken Grilled or rotisserie, shredded or diced

Filling Ingredients

  • 1 can Black beans Drained and rinsed
  • 1 cup Sweet corn Canned or fresh
  • 1 cup Cherry tomatoes Halved
  • 1 small Red onion Thinly sliced
  • 1/2 cup Fresh cilantro Chopped
  • 1 cup Shredded cheese Cheddar or Monterey Jack
  • 1 medium Avocado Diced
  • 1 cup Tortilla strips For crunch

Dressing

  • 1/2 cup Your choice of dressing Ranch, vinaigrette, or southwestern

Instructions
 

Preparation

  • Wash and dry the romaine lettuce, then chop it into bite-sized pieces and place it in a large salad bowl.
  • Dice or shred the cooked chicken and add it to the bowl.
  • Drain and rinse the black beans, then mix them into the bowl.
  • Measure out the corn and add it to the bowl.
  • Halve the cherry tomatoes and add them to the bowl.
  • Thinly slice the red onion and add it to the mixture.
  • Add chopped fresh cilantro to the bowl.
  • Sprinkle shredded cheese over the salad.
  • Gently toss all ingredients together.
  • Add diced avocado and tortilla strips on top.
  • Drizzle your choice of dressing over the salad and toss gently.
  • Serve immediately for maximum freshness.

Notes

Customize your salad by adding more vegetables or using different proteins. Store components separately for meal prep.
